• Magnesium Chloride (Complexity and Fruitiness): Magnesium is crucial for bringing out the complex, bright fruit notes. It enhances complexity in fermented coffee and provides a fuller, more complex mouthfeel, making it ideal for highlighting the unique, high-toned, and often tropical or berry-like notes that result from fermentation.
• Calcium Chloride (Sweetness and Texture): Calcium adds body and a creamy"juicy" mouthfeel, which is often needed to balance the sharp, sometimes thin, acidic notes of a highly fermented coffee. It helps to accentuate sweetness, creating a, balanced, and clean, rather than sharp, experience.
• Potassium Bicarbonate (Sharpness and Clarity): Potassium is used to buffer the acidity of fermented coffees.
