L-carnosine  is a dipeptide, i.e. a compound composed of two amino acids, consisting of beta-alanine and histidine. It occurs naturally in the body - mainly in the muscles, brain and kidneys, and its level depends on gender (higher level in men), age (decreases with age) and diet (low level in vegans and vegetarians). The importance of carnosine in the metabolic processes taking place in the body is demonstrated by the fact that in the case of muscles alone, it can constitute up to 0.5% of their mass.

L-carnosine  is produced in the body as a result of synthesis from beta-alanine and histidine and undergoes continuous metabolic changes. Because the endogenous synthesis of carnosine decreases with age and is largely dependent on the availability of histidine - an amino acid found mainly in food of animal origin - deficiencies of this ingredient may occur especially in older people, as well as in people on a vegetarian or vegan diet.
