He started his winery with a scant 3.5 hectares (about 8.5 acres) in the heart of Anjou and Savennières, in the Loire Valley.
Made from 100% Chenin Blanc, from 35-year-old vines, grown on shallow soils of gray schist and rhyolite (volcanic soil). Fermented with indigenous yeast, no malolactic conversion. Aged in 500-, 350-, and 228-liter barrels (20% new). Such purity and freshness in this wine.
