These organic Jerusalem artichoke tubers are easy to grow and can reach up to 10 feet tall in ideal conditions. Nutrient-rich and flavorful, the tubers have a sweet, nutty taste and a crisp texture often compared to water chestnuts when eaten raw. High in fiber and inulin, they are excellent for gut health, low-glycemic diets, and sustainable gardening. With Jerusalem artichoke tubers for sale in convenient 2 lb packs, it’s easy to add this resilient, nutritious crop to your home garden.

  • Zones: 4–9
  • Spacing/Depth: 15–24"/3–5"
  • Height/Spread: 8–10'/3–6'
  • Facts of note: Perennial, produces edible tubers which are good fresh, in salads, boiled or in soups. Plants can be used in some landscape situations making a high hedge in one growing season. Flowers resemble small sunflowers or large daisies. Ripens in late fall.

Why Grow Organic Jerusalem Artichokes?

  • Nutrient-Dense & Prebiotic-Rich – Packed with iron, potassium, and inulin, supporting digestive health and beneficial gut bacteria.

  • Delicious & Versatile Culinary Ingredient – Enjoy raw for a crunchy, water chestnut-like texture, or cook by roasting, mashing, or sautéing for a nutty, creamy flavor.

  • Easy to Grow & Perennial – Once planted, Jerusalem artichokes return year after year, thriving in a variety of conditions with minimal care.

  • Drought-Tolerant & Resilient – Adaptable to poor soils and dry climates, making it ideal for low-maintenance gardens.

  • Attractive & Pollinator-Friendly – Produces tall, sunflower-like blooms that support bees, butterflies, and beneficial insects.

Ways to Use Jerusalem Artichokes:

  • Raw & Crunchy – Slice thinly for salads or slaws, where their crisp, water chestnut-like texture shines.

  • Roasted or Mashed – A nutty, low-carb alternative to potatoes in soups, purees, and side dishes.

  • Fermented & Pickled – A probiotic-rich food that supports gut health and digestion.

  • Wildlife & Soil Enrichment – Improves soil structure while feeding pollinators and local wildlife.

The History & Significance of Jerusalem Artichokes

Indigenous to North America, Jerusalem artichokes were cultivated by Native American tribes long before being introduced to European settlers. Despite the name, they are not related to artichokes or Jerusalem—instead, the name comes from the Italian word girasole (sunflower), referring to their bright, towering blooms. Today, they remain a beloved heirloom crop for their nutritional benefits, adaptability, and rich history.

How to Plant & Grow Organic Jerusalem Artichokes:

  • Planting Time: Best planted in early spring once the soil is workable.

  • Sun Requirements: Prefers full sun, but tolerates partial shade.

  • Soil & Watering: Thrives in well-drained, poor soil with minimal watering.

  • Harvesting: Dig tubers in late fall to early winter after the first frost for the best flavor.

  • Storage: Store in a cool, dark place, or leave in the ground and harvest as needed.

Absolutely perfect
Format: Kindle
All of the characters are so expertly developed. They all support Lydia with unwavering understanding while she slowly opens up. I liked that the main conflict wasn’t between the pack and it instead pulled them closer together. This is honestly such a perfect feel good cozy omegaverse. There were some typos sprinkled through out but not enough to be irritating.

Totally Sweet
Format: Kindle
🔥OmegaVerse 🔥Single Mom 🔥Scent Match 🔥Emotional Trauma Well written, emotional omegaverse about a single mom of 2 with an ex-Alpha boyfriend that found his Omega and ditched his family. Cammie has a meet cute with Reid and Finton separately but they both find her to be their scent match. This book is totally sweet with lots of drama but lots of proving to Cammie that she is loved and wanted. My Personal Ratings: 5 Stars: Loved it! Couldn’t put it down or obsessed about it while needing to get to the end of it. Had to share some bits with my hubby!! Usually read in less than 2 days cause a girl has got to sleep sometime. Will be reading everything this author has to offer and most likely reread the series as next books in the series are released. 4 Stars: Really Good. Whether the story drew me in or a specific character, will definitely continue the series and look into more books by this author. 3 Stars: Enjoyed something about the book, whether it be the storyline or a character but also may have not liked something. Sometimes the book is great but needs some TLC from an editor. May or may not continue the series.

Read it!!! It's so good!
Format: Kindle
I will reccomend this book to anyone and everyone who is looking for an omegaverse book to read! The rabbit hole of male omega books this one sent my mood reading self down was crazy! 🤭 I could not have loved Finn more! He was the sweetest omega, making sure Cammie was comfortable each step of building a relationship with him and Reid. He was so good with the kids even though Ben was a little rough around the edges. Cammie's fears were all justified but the way she learned to trust her new pack was sweet! They just continued to show up and her sister was hilarious! Being a mom and thinking of her littles but also finding her own happiness was such a sweet journey for her 💖 lets just talk about the kids for a second and say Em is a spitfire and I LOVE her and Ben sweet Ben just wants to protect his Mama but needs love, Reid does such a good job stepping up! And the 'gift' at the end had me in tears!! 🥹 Without giving too much away that is why I think sweet Finn is my favorite of all male omegas I have ever read! His way with words no matter what he is using them for, declarations of love, pep talks, or advice he really just knows what needs to be said 💖

I wanted to like this more than I did
Format: Kindle
This started off so well! I thought it was going to take Lola on a run for her money but it ended up getting weird. I liked the writing but there was just too much spice which I didn't think was possible for me. There were too many times that the writing felt weird or the situations too outlandish and unrealistic. I had to skim through a lot of the later half. It might just be the dynamic between the characters that didn't work for me so I'll give this author another go.
