Sinds 1993 maken Gary en Kathy Jordan al hoge kwaliteitswijnen op hun topwijndomein. De geschiedenis van dit wijnhuis gaat maar dan 300 jaar terug. Het waren de ouders van Gary die in 1982 het landgoed met 164 hectare in Stellenbosch kochten. Ze zijn gespecialiseerd in klassieke druivenrassen die geschikt zijn voor de verschillende bodems en ligging. De hellingen van dit landgoed zijn uniek en kijken op het noordoosten en het westen met wijngaarden op verschillende hoogten. De druiven kunnen profiteren van de nabijheid van de Indische en de Atlantische Oceaan. Het zorgt voor een perfect klimaat waar de druiven ultiem kunnen rijpen. De Sauvignon Blanc druiven worden geoogst op verschillende rijpheidsniveaus. Hierdoor wordt er fruitcomplexiteit aan de wijn toegevoegd. Zodra de druiven de wijnmakerij binnenkomen worden ze direct ontpit. Daarna vindt de maceratie plaats, waarbij de schillen 6 uur in contact blijven met de most. Hierdoor worden de aroma’s versterkt. De druiven worden hierna voorzichtig geperst en wordt het sap overgeheveld naar de gistingstank. De fermentatie vindt plaats met geselecteerde gisten. Elk perceel vergist afzonderlijk van elkaar en vindt plaats bij een gecontroleerde temperatuur tussen 12 en 16 graden.De verfrissende Jordan Cold Fact Sauvignon Blanc
Doordat er geen eikenhout tijdens het vinificatieproces wordt gebruikt, zijn de aroma’s van deze Cold Fact Sauvignon Blanc lekker fris, met bessen en rijpe vijgen. I haven’t decided if I really like Matcha, as I got this, just to find that out. I find that the packaging is interesting, and it is best, probably, to store it in the package it comes in.
