Candied citrus - Nutty - Fresh 

Parajes del Valle is a new and exciting winery, established in 2018, and overseen by a young but experienced winemaker Maria Jover wjhose modern views are transforming the wines of the area. Certified organic grapes all come from old vines (15-40 years) split across four plots, maintained by the age-old Terraje system, where vineyards are rented out to farmers who give back 7% of the production in turn for taking good care of the vines. This system is increasingly at risk of dying out as landowners want to change to the more productive and cost-effective system of irrigated vineyards, but Parajes del Valle is determined to protect Terraje, even paying a higher price for the grapes to guarantee the highest quality.

Here, grapes are hand-harvested then carefully selected at the winery, undergoing spontaneous fermentation with wild native yeasts, then kept on on skins in concrete tank for 15 days. Minimal sulphur is added after fermentation. On the nose, you'll find candied orange citrus - tangerine, orange melon and even a hint of Lucozade and Irn-Bru? The palate is nice and grippy, with nut, citrus and candied fruit notes,and lovely fresh acidity.
